Smothered Okra Cabbage (vegetarian)

Serves 4

One cup Vidalia onion, sliced

2 cloves garlic, chopped

½ head green cabbage, cored and roughly chopped

1 15oz. can of dice tomatoes, with juice

1 ½ cup frozen okra, sliced

1 bay leaf

2 thyme sprigs

1 tsp. G|Cooks Creole Soul

1 tsp. kosher salt

1 tsp fresh cracked black pepper

2 T. Olive oil

Sauté the onions over medium heat until they start to soften. Add garlic, cook until fragrant, about 30 seconds.  

Add remaining ingredients, except okra. Stir well until cabbage begins to wilt. Cover and reduce heat to medium-low. Cook, stirring occasionally, for about 20-25 minutes, adding a little water (1/4 cup at a time) if it gets too dry.

Add the frozen okra mixing well and cover for 8-10 minutes. Remove cover. Raise heat to medium-high and stir until liquid begins to thicken and veggies are just past crisp tender. Adjust seasoning.

Serve with a big hunk of Corn Bread! “Eat Like You Mean It!”
