LeBron's Favorite Messy Rice
This complete meal is my take on a southern classic side, dirty rice. I’ve cleaned it up and packed it full of healthful ingredients with tons of flavor. Lean and mean, a perfect choice for a team dinner or family gathering.
Serves 12
- 2 pounds jumbo shrimp (wild-caught Florida preferred), peeled and deveined
- 1 pound ground turkey
- 2 pounds chicken breast, cut into 1-inch chunks
- 1/2 cup each red, yellow and green bell peppers
- 1/2 cup chopped celery
- 1 cup chopped green onion, white and pale green part only, reserving green ends for garnish
- 2 cloves garlic, minced
- 1 pound smoked turkey sausage (such as kielbasa), cut into 1/2-inch pieces
- 1 bay leaf
- 1 cup or more homemade chicken stock or quality canned to moisten
- 1/2 cup chopped fresh Italian parsley, plus extra for garnish
- 9 cups cooked white long-grain rice
- G-Cooks Creole Soul seasoning
- Canola oil for sautéing as needed
- Salt and freshly ground pepper
- Hot sauce for serving
Directions
Rinse shrimp and pat dry with paper towels. Season with GCooks Creole Soul seasoning. Grill or broil them until just cooked through, about 3-4 minutes. Do not over cook. Set aside and tent with foil to keep warm.
Season ground turkey with salt and pepper and brown in a large sauté pan, lightly coated with canola oil, until cooked through. Drain turkey in colander; don't clean pan. Season chicken with salt, pepper and Creole Soul seasoning. (Don't be shy with the Creole!) Cook through, then set aside in bowl.
Don't clean pan. Add oil, if needed, to cook peppers, celery, green onion and bay leaf until crisp tender, about 5 minutes. Add garlic and cook 30 seconds more.
Add sliced smoked turkey sausage. Stir over medium-high heat until warmed through. Return all ingredients, including meat juices and chicken broth, to pan.
Remove bay leaf. Stir in parsley and reserved green onion. Dump ingredients over platter or pan of rice. Top with jumbo grilled shrimp and more garnish. Serve with your favorite hot sauce.
