Baja Fish Tacos
For the Tacos
2 6-8 oz. Mahi Mahi filets sliced into 4 strips each
2 teaspoons G|Cooks Fiesta Blast Seasoning
Canola Oil
6 White corn tortillas
For the Garnish
Shredded Cabbage (white and red)
Chopped red onion
Chopped green onion
Chopped cilantro
3 limes, halved
White sauce (recipe follows)
White Sauce
1/3 cup mayonnaise
1/3 cup plain yogurt
Juice from ½ of lime
½ teaspoon Hot sauce (Cholula brand preferred)
½ teaspoon G|Cooks Fiesta Blast Seasoning
For the sauce:
Mix all ingredients in a bowl. Chill until ready to use.
For the tacos:
Preheat grill or grill pan to medium-high.
Pat fish filets dry and season with G|Cooks Fiesta Blast Seasoning. Drizzle with canola oil and keep chilled for 10-15 minutes.
When grill is hot, place filets directly onto the hot grill/grill pan. Also place the halved limes directly onto the grill. Grill the fish for 4 minutes on the first side and then flip for 2 more minutes and remove. Let rest for 3 minutes then chunk the fish with a fork. Removed limes from grill and reserve for garnish.
Place the tortillas on the grill and grill for 20-30 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes and a squeeze of the grilled lime.
Serve with G|Cooks Caribbean Salsa
